De wens van Frédéric Fages, bij de oprichting van Domaine de l'Anqueven, was het produceren van kwaliteitswijnen, in harmonie met de natuur en met respect voor het milieu .
De productie gebeurt met kleine opbrengsten, waarbij gebruik wordt gemaakt van natuurlijke producten en handmatige methoden voor het onderhoud en de teelt van de wijnstokken Organic Agriculture Certification door Ecocert, Ook de oogst gebeurt met de hand.
Er wordt bijzondere aandacht besteed aan het respecteren van de tijd die nodig is voor elke fase van de productie van een wijn. Elke druivensoort wordt individueel gevinifieert, met het grootste respect voor de natuurlijke rijpingsfasen. De blends komen laat en door rijping in vaten kunnen de aroma's van de wijn worden geperfectioneerd.

Frédéric FAGES founded Domaine de l’Anqueven with the goal of producing high-quality wines in harmony with nature and with respect for the environment.
The production involves low yields, using natural products and manual methods for vine maintenance and cultivation (Certified Organic Agriculture 2020 by Ecocert). The harvest is also done by hand.
Special attention is given to respecting the necessary time for each step in the wine-making process. Each grape variety is vinified individually, respecting the natural phases of maturation. Blending is done later, and aging in vats allows the wine’s aromas to develop perfectly.
The Wines of Domaine L’Anqueven
The wines of Domaine l’Anqueven consist of red wine “Le Souffle des Anges”, rosé “La Promesse des Anges”, white “L’Envol des Anges”, and a Cartagène “La Part des Anges”.
The harvest is carried out manually, and the grapes are sorted in the vineyard when necessary. On certain grape varieties, green harvesting is performed to limit yields and preserve the richness of the grapes.
“Le Souffle des Anges” is a blend of 4 grape varieties: Syrah, Petit Verdot, Grenache, and Carignan. Each grape variety comes from a different terroir and is vinified separately. Vinification is carried out without any additives or the addition of other oenological products.
“La Part des Anges” is the result of a late harvest of Grenache grapes to obtain the sweetest grapes possible. The grapes are immediately pressed to extract the juice, to which alcohol is added to halt fermentation (mutage). This process results in a very subtle sweet wine, highly appreciated in the Languedoc, and with an alcohol content close to 16% vol.
The terroir of Languedoc
Nestled in the heart of the Hérault department, Domaine de l’Anqueven is located in several municipalities: Adissan, Aspiran, Fontès, and Paulhan. This provides the estate with a wide variety of exposures and different soils.
Bordered to the East by the Hérault River and sheltered to the north by the Montagne Noire, these lands are particularly conducive to vine cultivation. The majority of the vineyard is established on villafranchian terraces. These are composed of quartz, flint, and limestone pebbles (clay-sandy soils). As a result, most of the vineyards are located in areas classified as AOC (Appelation d’Origine Contrôlée).
La cave de vinification
The cellar is composed of 5 temperature-controlled stainless steel tanks with floating caps and a few oak barrels used solely for storing mistelles (Cartagène).
In line with the philosophy of L’Anqueven, the wines are crafted as simply as possible to preserve the fruit aromas to the fullest. The use of new barrels or other elements that could alter the natural taste of the grapes and therefore the wine is avoided. Only a slight addition of sulfites is made to preserve the quality of the harvested grapes (within the Organic Agriculture threshold). Winemaking is carried out with respect for the material, temperatures, and fermentation occurs with natural yeast from the grapes.
